Cayman Brac food handlers recently attendeda Basic Food Hygiene Certification Course offered by the Departmentof Environmental Health (DEH).

Thirty-nine food handlers from various establishmentson the island including restaurants, catering services and hotelsparticipated and ten Cayman Brac High School students, takingthe school's catering course, were also included in the training.Environmental Health Officer, Christine Bell of the Grand Caymanoffice conducted the two one-day sessions on 8 and 9 March atthe District Administration Building in Stake Bay.

The course, which is free, provides detailedinformation on temperature control, cross contamination of foods,personal hygiene, pest control, cleaning and sanitation.

Assistant Director for Environmental Health,Roydell Carter is pleased with the results of the course: "Allof the participants did exceptionally well and it is expectedthat food handling and hygienic practices will continue to improve,"he explains. The department is also pleased that the high schoolstudents participated and did well, as the course is essentialto any catering career.

The DEH is encouraged with the level ofresponse in Cayman Brac and anticipates that additional food handlers'training sessions will be conducted on both Cayman Brac and LittleCayman later this year.
